Usage:
Yeastex 61 should be slurried and dissolved in water before being added to the wash post-mash. If boiling, it is added to the wash in the kettle shortly before chilling. Choose Yeastex® 61 for all distilling processes, especially whiskies high in raw materials or sugar bases like dextrose, sucrose, molasses, and agave that lack the nutrition yeast needs.
Home Distilling Application Rate: 2 grams per 5 gallons. Add 2 grams if terminal gravity isn't reached during initial fermentation.
Commercial Application Rate: 40-100 ppm (4 g/hl-10 g/hl, or 1 lb/100 bbls – 2.5 lbs/100 bbls)
