Glucoamylase enzyme is a fungal-derived enzyme made into a dried powder. It breaks down dextrins into simple sugars.
Glucoamylase (GA), also known as glucan 1,4-alpha-glucosidase, is used during saccharification, following alpha-amylase (AA) enzymes breakdown of starch into dextrin. It's useful to add in full mash conversion when making things like bourbon, where the amount of enzyme from distillers malt might be limited.
