A specially selected strain of Saccharomyces Cerevisiae, and was initially selected for distiller's to use in grain mash fermentations but is now used across many different spirit washes commercially. DADY (Distillers Active Dry Yeast) will produce maximum alcohol yield under controlled temperatures, anything less than 90°F, 32°C.
It has been the number one choice of many large commercial producers in North America for decades. It has been used in manufacturing light spirits such as gin and vodka and dark spirits like whiskey and rum for decades. It is most often used on corn mash and corn sugar-based fermentations, like those for bourbon and neutral spirit.
An all-purpose yeast strain in a bulk package. Remember, unlike Turbo yeasts, this is just yeast and does not include nutrients. You will need yeast nutrients if used in a sugar (dextrose, sucrose, molasses) wash.
