Lalvin QA23 has low nutrient and oxygen requirements, and it has been known to ferment at low temperatures (15 °C/59 °F) to dryness. It produces large amounts of the enzyme beta-glucosidase during growth which can aid in fermentation. It also manages to ferment in the presence of furfural in tequila quite well, making it our pick for the fermentation of agave when a fairly neutral tequila is being targeted.
